Sushi Sho Satori Japanese Plaster Work—Private

Sushi Sho was first founded in Yotsuya, Japan by chef and owner Keiji Nakazawa. Nakazawa had bypassed the traditional sushi apprenticeship and intensive training, delving straight into working at various sushi restaurants across Japan. He opened his first restaurant in Tokyo’s Nibanchō neighborhood, but had little success due to his lack of formal training. He used this time to experiment with different preparation and fermentation methods to elevate his sushi, which eventually gained him popularity in the area. He opened the first Sushi Sho and quickly gained notoriety across the country. After 25 years, he moved to Honoloulu to pursue new experiences and challenges, and subsequently opening the second Sushi Sho in 2017 . He gained numerous accolades, including being nominated for the Best New Chef James Beard Award in the Pacific category and being a semi-finalist for two James Beard Awards in the Pacific category. Nakazawa is currently in the process of opening a new Sushi Sho in New York, New York.

EverGreene was contracted to develop a proprietary plaster mixture for the walls at the Sushi Sho restaurant that emulated the natural beauty of Nakazawa’s home country of Japan.  Natural materials and earth tones were required to provide warmth and texture for guests to enjoy the restaurant.  With this in mind EverGreene developed an intricate plaster mixture using ground pigments, sand, straw and other natural materials.  A multistep application process and attentive mixing procedures required the highest of skilled EverGreene craftspeople to apply this delicate material to the various contoured walls that exist throughout the restaurant.
